Mokumoku Yakiton
Mokumoku Yakiton is a Japanese restaurant focusing on pork. Mokumoku means cloud-like smoke in Japanese, while yakiton refers to grilled pork skewers, typically cooked with miso or seasoned with salt. As well as Spanish Ibérico pork, which is the most popular gourmet ingredient, the restaurant serves various pork cuts, including organ parts such as heart, liver, tongue and intestine.
For some dishes, the caul fat found between the pig’s stomach and diaphragm is used in grilling to enhance the flavour. In addition to pork, there are chicken, beef and vegetable dishes and sashimi, to be paired with drinks and enjoyed in the izakaya-style atmosphere.
