Known for inventive hot pot bases, as well as premium ingredients to drop in and simmer, this establishment has secured a loyal following – and Michelin recommendations every year since 2012. Don’t shy away from creations like the tom yum koong cappuccino soup, which pairs a spiced pork bone broth with the creaminess of coconut and cacao foam. The same imagination is applied to meatballs and dumplings, with flavour combinations ranging from beef and black truffle to pork and salted egg. Sichuan Verandah

A smart, contemporary interior – replete with soft, red banquettes and warm pendant lighting – sets a relaxed tone for a menu rooted in Sichuan’s spice-led flavours. For those wary of the heat, a graduated scale from “baby spice” to “spice master” allows for careful calibration across staples such as hot and sour soup, Sichuan-style boiled mandarin fish with pickled vegetables and mapo tofu. At the two-Michelin-starred Arbor, Finnish chef Eric Raty marries Nordic sensibilities with seasonal ingredients sourced mainly from Japan. The dining experience unfolds in a space characterised by romantic archways, soft lighting and a palette of creams and corals – a dreamlike setting that feels far removed from Hong Kong’s frenetic Central district.

Recognised this year by both the Michelin and Black Pearl Restaurant guides, Leela brings a modern polish to Indian cooking, with occasional nods to Hong Kong.
