Winner: Amber 

Perennially ahead of the curve, Amber championed sustainable gastronomy long before it entered the mainstream, earning it three Michelin stars, a devoted following and the near-unanimous vote of our panellists. Under chef Richard Ekkebus, fine dining is reimagined with a lighter touch – eschewing dairy and gluten, while limiting red meat and refined sugars to let carefully selected seasonal produce shine through French-rooted technique. The result is an innovative menu, exemplified by signatures such as uni layered with creamy cauliflower, lobster jelly and premium caviar, presented in a sea urchin-inspired vessel.
