æra is a contemporary restaurant specialising in new Nordic cuisine. Its name means honour and era in Scandinavian and reflects its dedication to honouring Hong Kong’s talented young chefs. Led by restaurant partner and head chef Chevalier Yau, the culinary team draws inspiration from the New Nordic cuisine philosophy, which emphasises sustainability, ecological awareness and ethical considerations in food production.
The team takes local, natural ingredients and elevates them through traditional Nordic cooking techniques such as pickling, smoking, air-drying and fermentation to offer innovative and delicious dishes that celebrate the best of what New Nordic cuisine has to offer.
