Dragonair partners with Hugo’s to offer passengers the classic tastes of Europe inflight

(HONG KONG) Dragonair today announced the introduction of a new inflight menu featuring authentic European dishes inspired by Hugo’s, the fine-dining restaurant at the Hyatt Regency Hong Kong, Tsim Sha Tsui. The new menu will be offered to First Class and Business Class passengers flying on selected Dragonair flights from Hong Kong to Beijing and Shanghai from tomorrow until mid-April 2015.

This is the first time that Dragonair and the Hyatt Regency Hong Kong, Tsim Sha Tsui have joined hands for a special promotion, creating a menu that features 23 dishes including soups, appetisers and main courses. Hugo’s has a long-standing reputation for offering an impressive array of traditional European dishes using only the finest ingredients. Each of the dishes on the Dragonair menu has been carefully designed and adapted by Michael Donlevy, Executive Chef at the Hyatt Regency Hong Kong, Tsim Sha Tsui.

Speaking at a tasting event organised for the media today, Dragonair General Manager Inflight Services Andy Wong said: “Dragonair is delighted to partner with the Hyatt Regency Hong Kong, Tsim Sha Tsui for the first time to create a mouth-watering selection of inflight meals. Our professional catering team has worked very closely with Executive Chef Michael Donlevy to overcome the various challenges of adapting the restaurant’s flavourful dishes for our passengers’ enjoyment in the air.

“At Dragonair, we strive to offer a high-quality inflight dining experience by taking a more innovative approach. We recently rolled out a brand new First Class experience and are actively looking into enhancing the dining experience for our premium passengers, particularly in the choice of Western dishes offered. Hugo’s is rightly renowned for its interpretation of classic European dishes and as such matches perfectly with our catering concept,” Mr Wong added.

Xavier Pech, General Manager of the Hyatt Regency Hong Kong, Tsim Sha Tsui, said: “We treasure this valuable opportunity to present Hugo’s classic European delicacies to the esteemed passengers of Dragonair. This is a first-of-its-kind endeavour for us to cooperate with an airline on an inflight menu. We hope passengers will enjoy these exquisite dishes and feel the spirit of this unique partnership in the air.”

Using only the finest ingredients, signature dishes from this new menu promotion include Lobster bisque and Peppered Beef Tenderloin, Seasonal Vegetables, Pepper Sauce. The menu also includes some dishes designed exclusively for Dragonair, including the Fresh Crab Salad à la Russe appetiser and Pan-fried Norwegian salmon Fillet, Crayfish Tails, Caper Parsley Sauce.

Lobster Bisque is made from lobsters, vegetables, aromatics, wine and stock, and is simmered delicately to extract the rich flavours from the shellfish. Topped with a dash of fresh cream, the dish is one of the most popular offerings at Hugo’s.

Peppered Beef Tenderloin, Seasonal Vegetables, Pepper Sauce is a traditional French dish with high-quality beef tenderloin coated with cracked peppercorns before cooking. The peppercorns form a crust on the steak when cooked and provide a pungent yet complementary counterpoint to the rich flavour of the fine beef.

Hugo’s at Hyatt Regency Hong Kong, Tsim Sha Tsui is a fine-dining restaurant offering authentic European cuisine under the auspices of its fictional Bavarian host and namesake, Hugo Ludwig Wilhelm von Gluckenstein. Armed with an impressive array of traditional serving apparatus, including walnut wood Christofle hors d’oeuvres trolleys from the 1960s, Hugo’s revives the craft of table-side preparation for dishes such as lobster bisque, steak tartare and cherries jubilee.
